Norwegian style meatballs


  • 1 pound ground pork
  • 1 pound ground beef
  • 2 ounces minced shallots
  • 2 ounces minced capers
  • 5 ounces steamed beets
  • 2 tablespoons Dijon mustard
  • to taste kosher salt
  • to taste pepper
  • olive oil


  1. Steam beets just until knife tender, peel and small dice.
  2. Mince all vegetables and mix all ingredients together.
  3. Test a small amount for seasoning.
  4. Form 1 to 1 1/2 ounce portion patties.
  5. Pan fry in olive oil to medium well.

    That’s not the recipe published in the Orlando Sentinel back in 1988. I have a copy of it, and it had been given to the newspaper by Akershus’ sou chef. My mother used to make it all the time, and it was fabulous. Google it, and you will find it.
