Norwegian style meatballs

Ingredients

  1. 1 pound ground pork
  2. 1 pound ground beef
  3. 2 ounces minced shallots
  4. 2 ounces minced capers
  5. 5 ounces steamed beets
  6. 2 tablespoons Dijon mustard
  7. to taste kosher salt
  8. to taste pepper
  9. olive oil

Instructions

  1. Steam beets just until knife tender, peel and small dice.
  2. Mince all vegetables and mix all ingredients together.
  3. Test a small amount for seasoning.
  4. Form 1 to 1 1/2 ounce portion patties.
  5. Pan fry in olive oil to medium well.
