Yield: 6-8 muffins

Blueberry muffins Disney style

Ingredients

  • 2 each Sticks butter
  • 1 cup Granulated sugar
  • 2 each Whole eggs
  • 2 1/2 cups All-purpose flour (for gluten-free try Bob's Red Mill flour used by Disney)
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 1/4 cups Sour cream
  • 1/2tsp Vanilla
  • 1 pint Fresh blueberries (or frozen can be used)

Instructions

  1. Cream together butter and sugar until light and fluffy.
  2. Add eggs and incorporate
  3. Sift together dry ingredients
  4. Add dry ingredients, vanilla, and sour cream to butter mixture and mix until incorporated
  5. Fold in blueberries, do not over mix
  6. Scoop into muffins liners
  7. Bake at 350 degrees F for approx. 18 to 20 minutes
