Black Eyed Peas With Ginger Soy Juice

Black eyed peas with ginger soy juice

Ingredients

    Black Eyed Peas
  • 1 lb black eye peas (raw, soak overnight)
  • 1/2 cup safflower oil/vegetable oil
  • 1 lb white onions, diced small
  • 1 quart ginger soy juice
  • 1/2 lb spinach, julienned
  • Ginger Soy Juice
  • 1 cup soy sauce
  • 1 cup granulated sugar
  • 1 1/2 cups water
  • 6 tbsp fresh ginger, finely chopped

Instructions

    Black Eyed Peas
  1. Cook the black eye peas with water, salt and pepper.
  2. Drain and let cool.
  3. Heat oil in sauté pan.
  4. Add onion and black eye peas, stirring constantly.
  5. Add ginger soy juice and continue stirring.
  6. Add spinach just before serving.
  7. Ginger Soy Juice
  8. In a stainless pot, heat all the ingredients until it boils. Let simmer for 20 minutes.
  9. Strain the juice through a China cap. Let cool.
