Peppermint Bark

Peppermint bark

Ingredients

  • 12 ounces high quality semi-sweet chocolate, chopped, or chips, divided
  • 1/4 teaspoon peppermint oil
  • 12 ounces high quality white chocolate, chopped, or chips, divided
  • 1/4 cup crushed peppermint candy

Instructions

  1. Line 15x10 inch baking sheet with aluminum foil smoothing along bottom and sides
  2. Place ice in bottom of large bowl and cover ice with kitchen towel. Set aside.
  3. Bring water to a gentle simmer in bottom of double boiler over medium-low heat
  4. Add 1 1/4 cup semi-sweet chocolate chips to top of double boiler, making sure bottom of bowl is not touching water.
  5. Stir continuously until 3/4 chips are melted.
  6. Remove from heat and place on towel in ice bowl for 20 seconds.
  7. Remove from ice and gradually add remaining 3/4 cup chocolate chips stirring continuously so that residual heat melts remaining chocolate.
  8. Once chocolate melts stir in peppermint oil.
  9. Spread onto baking sheet and chill until completely firm.
  10. Once chocolate is firm bring water back to gentle simmer.
  11. Repeat steps 3-8 with white chocolate.
  12. Spread white chocolate over semi-sweet chocolate.
  13. Immediately sprinkle with crushed peppermint
  14. Refrigerate until firm.
