12 ServingsIngredients - Dough
- 1/2 cup softened butter
- 1/4 cup granulated sugar
- 1 egg
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
Ingredients - Filling
- ½ Egg yolk
- 2 cups granulated sugar
- 2 tablespoons lemon rind
- 1 cup lemon juice
- 1 cup butter
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
Directions - Dough
- Cream butter and sugar together, slowly adding the egg, then the flour and salt together.
- Press into the bottom of a sprayed sheet pan.
- Bake for 15 minutes at 350°.
- Remove from oven and cool slightly.
Directions - Filling
- Combine all ingredients and pour over the dough, placing in a 350° oven for 25 minutes.
- Remove and cool.
- Cut into diamond shapes when finished.
