Cajun Meatloaf Recipe

Several fairly large loaves


Ingredients

  1. 9 lbs. ground beef
  2. 3 lbs. ground pork
  3. 12 eggs beaten
  4. 6 cups fresh bread crumbs
  5. 3 cups ketchup
  6. 3 cups heavy cream
  7. 4 tbsp. crystal hot sauce
  8. 3 oz. Worchester sauce
  9. 12 oz. unsalted butter
  10. 6 oz. green onions (thinly sliced)
  11. 2 lbs. onions (1/4" chopped)
  12. 20 oz. celery (1/4" chopped)
  13. 20 oz. bell peppers (1/4" chopped)
  14. 4 tbsp. minced garlic
  15. 2 tbsp. salt
  16. 2 tsp. cayenne
  17. 2 tsp. black pepper


Directions

  1. Melt butter in large skillet.
  2. Saute all vegetables in the melted butter at medium heat until tender.
  3. Stir in cream and ketchup.
  4. Cook 5 minutes.
  5. Let cool completely.
  6. Mix all ingredients in Hobart (stand mixer) with paddle for 10 minutes at speed two.
  7. Divide into 4 inch pans lined with parchment paper, 5 lb. 12 oz. per pan, 1/3 inch high.
  8. Cook at 325 degrees for two hours, internal temperature at 160 degrees.
  9. Let set at room temperature for approximately 10 minutes then drain grease.
  10. Let stand longer approximately two hours and then drain remaining grease.
