Pumpkin Soup

Pumpkin soup with carrots and onions

Ingredients

    Pumpkin Soup
  • 3 1/2 lbs Pumpkin
  • 1 tsp Curry Powder
  • 13 oz Onions (Diced)
  • 13 oz Carrots (Diced)
  • 4 oz Butter
  • 1 qrt Heavy Cream
  • Salt to taste
  • White Pepper to taste
    • Garnish
  • 1 cup Creme Fraiche
  • Cinnamon 1 Dash
  • Nutmeg 1 Dash

Instructions

  1. Place all ingredients in a pot except for the cream and let simmer for one hour.
  2. While cooking the soup assemble garnish by mixing all together.
  3. Puree the soup and finish with the heavy cream.
