Chocolate Mousse

Ingredients

  • 4½ ounces Semi-Sweet Chocolate
  • 1/3 cup Butter, broke into pieces
  • 2 Egg Yolks
  • 3 Egg Whites
  • 1½ Tablespoons Granulated Sugar

Instructions

  1. Melt the chocolate in a double boiler.
  2. Remove from heat and add the butter, stirring with a wooden spoon.
  3. Add the egg yolks and mix in. Allow the mixture to cool completely.
  4. Beat the egg whites until very stiff; halfway through, add the sugar.
  5. Fold the egg whites into the chocolate mixture, beginning with a handful to soften the chocolate. Gently fold in the remainder with a spatula.
  6. Place in a dish and refrigerate for at least 2 hours to set.
  7. Garnish as desired.
