Yield: 3 cups

Mama's Favorite Bruschetta

Bruschetta with shallots and onions

Ingredients

  • 1 cup diced yellow tomato
  • 2 cups diced vine ripened tomatoes
  • 1/8 cup basil chiffonade
  • 2 tsp shallots - minced
  • 1/4 tsp garlic (minced)
  • Ground black pepper to taste
  • Kosher salt to taste
  • 1/4 cup red onion diced
  • 1/4 cup balsamic vinegar

Instructions

  1. Cut tomatoes in half and squeeze the seeds out.
  2. Cut to a 1/3 inch wedges.
  3. Blend the rest of the ingredients in bowl.
