Jasmine Cashew Rice

Jasmine rice with vegetable stock

Ingredients

  • 4 cups vegetable stock
  • 2 cups jasmine rice
  • 1/2 cup cashews
  • 1/4 cup fresh chives
  • 1/4 cup minced ginger
  • 4 tbsp olive oil
  • kosher salt to taste

Instructions

  1. In a pan, bring stock to a boil and then add rice. Cook according to directions.
  2. When rice is done, fold in the cashew, chives, minced ginger and olive oil.
  3. Season to taste with salt and pepper.
