Root Beer Bourbon Sweet Potatoes

Sweet potatoes with a bourbon and root beer sauce

Ingredients

  • 3 pounds Fresh California Sweet Potatoes, peeled & sliced in 1/2" rounds
  • 1 quart root beer
  • 1 cup bourbon
  • 1 ounce lemon juice
  • 6 ounces water
  • 3 ounces corn starch
  • 2 ounces butter
  • pinch of ground cloves

Instructions

  1. Mix corn starch with water, set aside.
  2. Bring all other ingredients to a boil in a pot.
  3. Add corn starch mixture.
  4. Sauce is now ready to be poured on sweet potatoes.
  5. Slice fresh sweet potatoes in 1/2" circles, bake in 350 degree oven until soft.
  6. Remove from oven, pour glaze over and they are ready to serve.
