Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl, mash bananas.
  3. In a separate bowl, whisk together oil, eggs, brown sugar, and vanilla.
  4. Sift together flour (for gluten-free try Bob's Red Mill flour used by Disney), baking soda, baking powder, salt, cinnamon, and nutmeg over the wet mixture.
  5. Fold in the bananas.
  6. Portion with a leveled scoop and top with chopped nuts.
  7. Bake for 350 degrees for 15 minutes, then turn oven down to 325 degrees and bake for another 15 minutes, or until a toothpick check comes out clean.
